To gralloch a (usually) deer is to disembowel and generally eviscerate it after it has been shot. This must be done as soon as possible after killing to minimise cross contamination and so is usually done on the hillside. This also makes the carcass lighter to carry, either on the back of a pony, or in a Land Rover. The contents are left on the hillside for the consumption of other wildlife and the carcass should then be stored in a temperature controlled game room to condition.
